Herb-Roasted Potatoes

Ingredients

  • 2 pounds baby potatoes washed
  • 3 tablespoons olive oil
  • 2 prigs fresh Rosemary
  • 1 tablespoon fresh thyme
  • 1/4 cup fresh oregano
  • salt and pepper
  • 1/4 cup parsley

Instructions

  1. Preheat the oven to 400°F. Use a sharp knife to halve the baby potatoes.
  2. Spread the potatoes out on a large baking sheet.
  3. Mix together with the olive oil, rosemary, thyme, oregano, salt, and pepper. Bake for 35–40 minutes. Toss the potatoes every 15 minutes.
  4. Once the potatoes have attained the desired crispness, remove from the oven. Sprinkle the fresh parsley. Toss once more.
