Ingredients

  • 1 pound ground chicken
  • 1/2 cup finely grated Parmesan cheese
  • 1 large egg
  • 1/2 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • kosher salt and pepper to taste
Toppings:
  • 1/2 cup marinara or pizza sauce
  • 4 ounce fresh mozzarella cheese
  • 1 large tomato sliced
  • fresh basil leaves

Instructions

  1. Preheat the oven to 425°F and line a baking sheet or pizza pan with parchment paper.
  2. Take a medium bowl and add in the ground chicken, parmesan, egg and seasonings. Mix thoroughly to combine. Transfer the meat mixture and spread on the prepared pan into a 1⁄4-inch thick circle.
  3. Bake for 30 minutes or until it starts to brown on the edges.
  4. Top with the toppings and continue to bake for 5 minutes, or until the mozzarella melts.

Notes

  • Storing: If you have leftovers, place them in an airtight container in the refrigerator for up to about 4 days.
  • To reheat: Place the pizza on a baking sheet and bake at 425°F for about 10 minutes, or until heated through. You can also use the microwave.
  • Freezing: You can freeze the pizza for up to 2 months. Wrap it tightly in plastic wrap and then place it in an airtight container or ziplock freezer bag. Follow directions for reheating directly from frozen.
