Hokey Pokey (Honeycomb Toffee)

The hokey pokey or honeycomb toffee is the favorite confectionery of New Zealand and Australia. It is prepared with sugar and golden syrup.

Ingredients

  • ¾ cup caster sugar
  • ½ cup golden syrup
  • 1 tablespoon baking soda
  • butter for the mold, unsalted
Equipment
  • Square pan (8 inches / 20 cm)

Instructions

  1. Grease an 8x8 inch (20 cm x 20 cm) pan with butter.
  2. Add the caster sugar and the Golden Syrup into a thick-bottomed non-stick saucepan.
  3. Heat gently, stirring constantly until the sugar dissolves.
  4. Increase the heat, bring to a boil, and boil for 2 minutes, stirring regularly.
  5. Remove from heat.
  6. Add the baking soda and stir very fast (the mixture will foam quickly).
  7. Immediately pour into the mold.
  8. Let cool and set.
  9. Break into pieces.
  10. Serve as is or with vanilla ice cream.
