Creamy eggnog is a thick, rich holiday drink spiced with nutmeg, clove, and cinnamon. It’s just the thing to get in the holiday spirit!

Ingredients
- 6 large eggs separate yolks from whites
- 1/2 cup sugar + 1 tbsp sugar
- 2 cups milk
- 1 cup heavy cream
- 1/2 teaspoon ground nutmeg
- 1/8 tsp ground cloves
- 1/4 tsp kosher salt
- 1/4 tsp vanilla extract
- 1/4 cup bourbon optional
- ground cinnamon for garnish
- Whipped Cream
Instructions
- Separate egg yolks from whites. Cover and refrigerate the egg whites. Either use a whisk in hand or in the bowl of a stand mixer, beat the egg yolks and the 1/2 cup sugar until sugar is completely dissolved and yolks are light and creamy. Set aside.
- In a medium saucepan, over medium-high heat, combine the milk, heavy cream, nutmeg, clove and salt. Whisk until the mixture almost reaches a simmer and small bubbles start to form around edges of the saucepan.
- Add a big spoonful of the hot milk mixture using a soup ladle into the egg mixture, whisking vigorously. Repeat, adding a 2 more big spoonfuls, to temper the eggs.
- Once most of the hot milk mixture has been added to the eggs, pour the mixture back into the saucepan on the stove. Over medium heat cook until the mixture reaches 160°F and has thickened. Remove from the heat, stir in the vanilla. Pour through a fine mesh strainer into a pitcher or other container. Cover with plastic wrap, refrigerate until cold (about 1-2 hours).
- In a medium mixing bowl, beat the reserved egg whites to soft peaks. With the mixer running, gradually add the reserved 1 tablespoon of sugar and beat until stiff peaks form. Whisk the chilled mixture into the whipped egg whites and incorporate completely. Pour into glasses and serve with whipped cream on top and a sprinkle of ground cinnamon.
