Homemade Apple Cake Recipe (Crazy Moist)

Ingredients

  • 2 cups grated apples about 4 medium apples
  • 4 eggs
  • 1 1/2 cups sugar
  • 1 cup oil light olive, coconut or avocado
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1 pinch salt
  • oil for baking pan

Instructions

  1. Combine together eggs, sugar, oil, vanilla extract and salt in the bowl of a stand mixer and beat until the mixture is fluffy.
  2. In small portions, mix the flour and baking powder into the egg mixture.
  3. Peel and grate the apples on the large side of a cheese grater. Mix the apples into the cake batter.
  4. Spray the baking dish with oil. Pour the cake batter into the pan. Bake at 325°F for about 50 minutes or until the toothpick comes out clean.
  5. Remove the cake from the pan and let it cool to room temperature. Enjoy!
