These baked sweet potato tots are a healthy, fun twist on traditional tater tots! They're easy to make with just 3 ingredients for a simple side dish.

Ingredients
- 1 pound sweet potatoes skins on
- ¼ cup brown rice flour
- 1 teaspoon kosher salt
Instructions
- Bring a large pot of water to boil on the stove over high heat.
- Add the whole sweet potatoes to the water and boil for 20 minutes. Remove the potatoes from the water and allow them to cool.
- Once cool enough to handle, peel the potatoes. Shred the peeled potatoes with a box grater.
- Add the grated sweet potatoes to a large bowl with the flour and salt. Combine well.
- Roll and squish the potatoes into tot shapes.
- Place them on a baking sheet and into a 375°F oven for 30 minutes.
