  • 6 slices Bacon cooked
  • 2 tablespoons butter
  • 4 stalks celery diced
  • 1 onion diced
  • 3 carrots diced
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 3 eggs

  1. Slice bread into strips that are ¼ wide and about 2 inches long. Spread the bread in one even layer on two sheet trays.
  2. Bake at 375ºF for about 10 minutes to dry out the bread.
  3. In a large saucepan, cook the bacon until it's just crisp. Remove it from the pan and chop.
  4. Add the butter to the bacon fat in the pan.
  5. Add the veggies, salt, and pepper. Cook until soft, about 5-8 minutes.
  6. Toss the dried bread, chopped bacon, and sauteed veggies together.
  7. Whisk together the broth and the eggs. Pour the mixture over the bread crumb mixture and toss to combine.
  8. Pour into a 9x13 baking dish.
  9. Cover with foil and bake for 15 minutes. Uncover and bake for an additional 5-10 minutes, or until golden brown.
