Ingredients
Chai Tea Concentrate (makes 48 ounces)
- 6 teaspoons Darjeeling black tea or use 6 Darjeeling black tea bags
- 6 cups water filtered, cold or room temperature
- 2-4 inches fresh ginger 1" slices, crushed to release flavors (this ingredient is optional for more of a traditional "bite"
- 2 cinnamon sticks crushed (2 short sticks or one 6-8 inch stick of cinnamon)
- 4-6 whole cloves crushed
- 6-7 cardamom pods crushed
- 1 star anise optional, crushed
- 2 tsp vanilla extract or 1 teaspoon vanilla bean paste
- ¼ -½ tsp nutmeg fresh grated
- ¼-⅓ cup honey depending on desired sweetness, white, brown sugar, maple syrup, agave or sugar substitutes may also be used
Chai Latte (1:1 ratio of conecntrate to milk)
- 6 ounces whole milk other % of milk or plant based drinks may be used
- 6 ounces chai concentrate recipe above
Option #2 Quick Chai Tea Latte
- 2 bags Chai tea or two 2 teaspoons loose leaf chai tea; use your favorite, I like the Rishi brand
- 1/2 cup boiled water just boiled, do not overboil
- 1-2 teaspoons honey or favorite sweetener
- ¼ teaspoon vanilla extract
- ½ cup milk use cows milk or your favorite plant based milk
Option #3 Super Fast Chai Tea Latte
- 6 ounces chai tea concentrate store bought, such as Tazo Chai Concentrate, found in tea section
- 6 ounces milk cows milk or your faovirte plant based milk

How to make your own chai tea concentrate
- Measure all of your spices and ingredients so you are ready to go.In a bowl using the end of a wooden spoon or using a morter and pestle gently crush the 1-2 cinnamon sticks, 4-6 whole cloves, 4-5 cardamom pods, 1 star anise, and ginger (4 1-inch pieces), grate fresh grated nutmeg (¼-½ tsp
- Bring 6 cups filtered water to a gentle boil and reduce to a simmer; add tea (6 teaspoons or 3-4 tea bags), add crushed spices and vanilla extract (1-2 tsp) to simmering.
- Reduce heat to a gentle simmer for just 5 minutes (longer will cause your tea to be bitter), stirring occasionally. Remove from heat. Stir in honey and allow mixture to steep covered for about 10-15 minutes.
- Place a fine mesh strainer over a large 8 cup measuring bowl. Carefully pour chai concentate through the sieve. Discard tea bags and spices. Pour chai concentrate into desired container (at least 48 ounces) jar or bottle, cool and refrigerate.

- Store chai concentrate in the fridge for up to 2 weeks, though I have kept mine for up to one month. As with all refrigerated items, if it smells off or has any growth or mold, then do not use it. Chai concentrate may also be frozen, I freeze in ice cube trays, great for an Iced Chai Latte!
- To rewarm, place the desired amount of concentrate and milk in a frother to heat and froth or warm on the stovetop.

- Variations and Substitutions
- Starbucks used to use Tazo Chai Tea Concentrate, available in your grocery store. They have regular and decaf and they also make a Skinny Version.
- Pour equal parts of chai concentrate and preferred milk into a small saucepan or frother, heat until simmering, froth milk with whisk or frother, pour together dust with a little cinnamon and enjoy!
- In a heat-proof cup, add tea bags (or loose-leaf tea in an infuser) and pour just boiled water over the top. Steep for 5-10 minutes, the longer it steeps the stronger it is, but also a bit more bitter too.
- Remove tea bags and stir in desired sweetener (honey, etc) and vanilla extract.
- Pour into a 16 ounce mug, heat and froth your milk and pour over the top.
- Use frother for both products, or just heat the milk in the frother depending on tastes.
- Honey may be replaced with all-natural sugar, white sugar, brown sugar, maple syrup, agave, or your favorite sugar replacement.
- Adjust the spices to your liking; if you don't like something leave it out, or you love something, start by adding a little extra at a time, tweaking to make it yours.
- Ginger: if there is too much (or too little 'bite') from the ginger, adjust accordingly.
- Optional: add ten peppercorns for even more 'bite'
