Homemade Enchilada Sauce (from scratch!)

Ingredients

  • 2 tablespoons olive oil
  • 2 tablespoons flour
  • 1 tablespoon prepared chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt to taste
  • 8 ounces can tomato sauce
  • 1.5 cups chicken stock

Instructions

  1. Heat the oil in a large skillet to medium heat.
  2. Whisk in the flour and chili powder and cook until lightly brown.
  3. Reduce heat to medium and continue to whisk until lightly browned.
  4. Add the cumin, garlic, oregano, and salt.
  5. Gradually whisk in the chicken broth and tomato sauce until well combined.
  6. Bring to a simmer and cook (whisking occasionally) over medium low heat until the sauce is thickened.
