Everyone loves a homemade gift for Christmas! These no bake buckeyes are a delicious combination of peanut butter and chocolate.

Ingredients

  • 1 ½ cups creamy peanut butter
  • ½ cup unsalted butter softened
  • 1 teaspoon vanilla extract
  • 3 ½ cups powdered sugar

Coating

  • 12 oz semi-sweet chocolate chips
  • 2 tablespoons vegetable shortening or coconut oil

Instructions

  1. Line baking sheets with parchment paper or silicone mats.
  2. In a large bowl, beat the peanut butter, butter and vanilla extract until creamy and smooth.
  3. Gradually add the powdered sugar and mix until well combined.
  4. Shape the peanut butter mixture into 1 inch balls and place them on the prepared baking sheet. Freeze the balls for 1 hour.
  5. Put the chocolate chips and shortening in a microwave safe bowl. Heat for 1 minute, then stir and continue heating for 10-15 seconds at a time, stirring after each heating and stop just before all chocolate is melted.
  6. Stir the chocolate until it is completely melted.
  7. Take the balls out of the freezer 3 or 4 at a time. Use a toothpick to dip the balls into the melted chocolate, covering about ¾ of the ball and leaving an open circle on top. Shake off excess chocolate and place on prepared baking sheet.
  8. Use your finger to smooth over the hole from the toothpick.
  9. Store in an airtight container at room temperature for 2 days or in the refrigerator for up to 2 weeks. Or freeze for up to 3 months

Notes

  • Package these in mini baking cups and put them in a cookie tin for gift giving.
