Everyone loves a homemade gift for Christmas! These no bake buckeyes are a delicious combination of peanut butter and chocolate.

Ingredients
- 1 ½ cups creamy peanut butter
- ½ cup unsalted butter softened
- 1 teaspoon vanilla extract
- 3 ½ cups powdered sugar
Coating
- 12 oz semi-sweet chocolate chips
- 2 tablespoons vegetable shortening or coconut oil

Instructions
- Line baking sheets with parchment paper or silicone mats.
- In a large bowl, beat the peanut butter, butter and vanilla extract until creamy and smooth.
- Gradually add the powdered sugar and mix until well combined.
- Shape the peanut butter mixture into 1 inch balls and place them on the prepared baking sheet. Freeze the balls for 1 hour.
- Put the chocolate chips and shortening in a microwave safe bowl. Heat for 1 minute, then stir and continue heating for 10-15 seconds at a time, stirring after each heating and stop just before all chocolate is melted.
- Stir the chocolate until it is completely melted.
- Take the balls out of the freezer 3 or 4 at a time. Use a toothpick to dip the balls into the melted chocolate, covering about ¾ of the ball and leaving an open circle on top. Shake off excess chocolate and place on prepared baking sheet.
- Use your finger to smooth over the hole from the toothpick.
- Store in an airtight container at room temperature for 2 days or in the refrigerator for up to 2 weeks. Or freeze for up to 3 months
Notes
- Package these in mini baking cups and put them in a cookie tin for gift giving.
