Ingredients

  • ¼ cup red wine vinegar
  • lemon juice of 1
  • 1 garlic finely minced clove
  • 1 teaspoon Dijon mustard
  • 1 ½ teaspoons oregano dry
  • 1 1/2 teaspoons sugar
  • ¾ cup extra virgin olive oil
  • salt to taste
  • black pepper to taste

Instructions

  1. Add the red wine vinegar, lemon juice, garlic, Dijon mustard, oregano, sugar, salt, and pepper to a medium size bowl.
  2. Slowly drizzle in the olive oil while vigorously and continuously whisking until the dressing has come together and is emulsified.
  3. Serve or cover and refrigerator until ready to serve.

  • Prepare the dressing up to three days ahead to let flavors meld.
  • Store covered at room temperature for up to five days or refrigerate for up to ten days to preserve freshness.
  • Add ¼ cup crumbled feta cheese to vary the flavor.
