Homemade Hamburger Helper

How to make homemade hamburger helper instead of using the box mix. Rich and creamy, this is best served with a light side dish like salad for a complete dinner.

Ingredients

Servings
  • 1 pound lean ground beef
  • 1 medium white onion diced finely
  • 1 tablespoon minced garlic 

Seasoning

  • 2 teaspoons paprika
  • 1 teaspoon seasoning salt
  • 1 teaspoon dried parsley
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dry mustard
  • ½ teaspoon black pepper

Sauce

  • 4 cups hot beef broth
  • 1/3 cup ketchup
  • 2 tablespoons tomato paste
  • 3 cups cavatappi pasta

Cornstarch Slurry

  • 1/2 cup heavy cream
  • 1 teaspoon cornstarch

Topping

  • 2 cups grated sharp cheddar cheese

Instructions

  1. In a large lidded skillet over medium high heat, add the ground beef and onions. Cook, breaking the meat into small pieces, until the meat is browned and the onions are soft and translucent.
  2. Add the garlic and sauté until browned and fragrant, around 2 minutes.
  3. Whisk the spices together in a small bowl, then add to the meat mixture, sauteing until fragrant, around 1 minute.
  4. Add the beef broth and ketchup, mixing into the mixture. Stir in your pasta of choice.
  5. Bring to a low boil and simmer for 10-11 minutes, or until the pasta is al dente.
  6. Prepare the cornstarch slurry. If the mixture doesn't need thickening, simply add the cream. If you have a lot of liquid left, add 1-2 teaspoons of cornstarch into the cream to thicken up the sauce.
  7. Stir the cream into the mixture until mixed throughout and the sauce thickens.
  8. Sprinkle the grated cheddar cheese over the pasta and mix in until the cheese has melted into the sauce.
  9. Remove from the heat. Garnish with freshly chopped parsley, if desired, then serve.

Notes

  • Cavatappi pasta is my favorite to use, but elbow macaroni, pasta shells, or penne also work in this recipe.
