Ingredients
- 1 ounce dried chile de árbol
- 2 cups boiling water
- ⅓ cup chopped onion
- 2 garlic cloves
- ¼ cup tomato sauce
- 1 tablespoon brown sugar
- ¼ teaspoon cumin
- 1 teaspoon chili powder
- ⅓ cup white wine vinegar
- 1 pinch kosher salt
Instructions
- Note: REMEMBER TO WEAR GLOVES WHILE HANDLING PEPPERS!
- Remove the stems from 1 ounce dried chile de arbol and add them to a medium bowl. Pour 2 cups boiling water over the peppers and let them steep for a few minutes until they have been rehydrated.
- Add the peppers and water to a blender or food processor and blend until the peppers are fully pureed.
- Add the ⅓ cup chopped onion, 2 garlic cloves, ¼ cup tomato sauce, 1 tablespoon brown sugar, ¼ teaspoon cumin, 1 teaspoon chili powder, ⅓ cup white wine vinegar, and 1 pinch kosher salt to the blender and blend until pureed.
- Pour the mixture into a medium saucepan and bring to a boil over high heat. Once it is boiling, reduce the heat to medium-low and simmer for 20 minutes.
- Remove from the heat and strain the mixture through cheesecloth before adding it to a sterilized bottle for storing.
