Homemade Italian Dressing Recipe
This Homemade Italian Dressing combines red wine vinegar, Dijon mustard, garlic, dried herbs, and fresh parsley with Parmesan cheese for savory flavor. A pinch of red pepper flakes and sugar balance the taste. Olive and salad oils whisked in slowly create a smooth, versatile dressing or marinade.
Ingredients
- 1/3 cup red wine vinegar
- 1 teaspoon Dijon mustard
- 2 garlic cloves finely minced
- 2 teaspoons oregano dry
- 2 teaspoons basil dry
- 2 tablespoons parsley chopped, fresh
- pinch red pepper flakes crushed
- 1 tablespoons sugar
- 1/3 cup Parmesan Cheese finely grated
- 1 teaspoon salt coarse
- ¼ teaspoon black pepper cracked
- ½ cup olive oil
- ½ cup salad oil
Instructions
- Add all of the ingredients except for the oil to a large size mixing bowl.
- Whisk until everything is completely combined and smooth and then slowly drizzle in the oil while continuing to whisk.
- Refrigerate until ready to use.
Notes
- Prepare up to five days ahead to allow flavors to develop.
- If using only dry ingredients, refrigerate up to 14 days; with fresh ingredients, refrigerate up to 7 days.
- You may use only olive oil or only salad oil depending on preference.
- This dressing works well as a marinade for vegetables or proteins.
