Description

  • 1/3 cup red wine vinegar
  • 1 teaspoon Dijon mustard
  • 2 garlic cloves finely minced
  • 2 teaspoons oregano dry
  • 2 teaspoons basil dry
  • 2 tablespoons parsley chopped, fresh
  • pinch red pepper flakes crushed
  • 1 tablespoons sugar
  • 1/3 cup Parmesan Cheese finely grated
  • 1 teaspoon salt coarse
  • ¼ teaspoon black pepper cracked
  • ½ cup olive oil
  • ½ cup salad oil

Instructions

  1. Add all of the ingredients except for the oil to a large size mixing bowl.
  2. Whisk until everything is completely combined and smooth and then slowly drizzle in the oil while continuing to whisk.
  3. Refrigerate until ready to use.

Notes

  • Prepare up to five days ahead to allow flavors to develop.
  • If using only dry ingredients, refrigerate up to 14 days; with fresh ingredients, refrigerate up to 7 days.
  • You may use only olive oil or only salad oil depending on preference.
  • This dressing works well as a marinade for vegetables or proteins.
