Homemade Marshmallows

Ingredients

  • 1 cup water divided
  • 3 envelopes unflavored gelatin
  • 2 cups sugar
  • 1/2 cup light karo syrup
  • 1/2 teaspoon salt
  • 2 Tablespoons vanilla extract or vanilla beans, almond, lemon, orange, or mint
  • To coat marshmallows:
  • 1 - 1 1/2 cups powdered sugar
  • 2 Tablespoons cornstarch optional

  1. In a stand mixer with whisk attachment, pour in 1/2 cup of the water and gelatin. Set aside to allow gelatin to soak in.
  2. In a medium saucepan over medium-high heat, add sugar, karo syrup, remaining 1/2 cup water, and salt. Bring to rolling boil. Let boil for 1 minute. Remove from heat.
  3. Turn the mixer on and mix the gelatin and water. Slowly add the hot sugar mixture and continue to mix on the low speed.
  4. Turn the mixer to high speed and mix for 12 minutes until it becomes thick and fluffy. Scrape the sides of the bowl often. Add vanilla or other extract and combine.
  5. Pour mixture into buttered or parchment covered baking pan -- 9 x 9 or 9 x 13 depending on desired thickness. Spread it in pan.
  6. Cover with plastic wrap and let sit at room temperature for at least 3 hours or overnight to let the marshmallows set.
  7. Once the marshmallows are set, pour powdered sugar and cornstarch over working surface. Invert pan over powdered sugar. Sprinkle powdered sugar over marshmallows.
  8. Cut into squares. Roll each one in powdered sugar.
