Instructions
- Preheat the oven: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.
Make the cookie dough:
- In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy, about 3-4 minutes.
- Add the eggs, one at a time, mixing well after each addition, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
- Stir in the oats and raisins (if using) until evenly distributed.
Bake the cookies:
- Scoop tablespoon-sized portions of dough and roll them into balls. Place them about 2 inches apart on the prepared baking sheets.

Assemble the oatmeal cream pies:
