  • ½ cup raisins optional

For the cream filling:

  • 1 cup unsalted butter softened
  • 1 ½ cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1-2 tablespoon heavy cream or milk adjust for desired consistency

Instructions

  1. Preheat the oven: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.

Make the cookie dough:

  1. In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy, about 3-4 minutes.
  2. Add the eggs, one at a time, mixing well after each addition, then stir in the vanilla extract.
  3. In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  4. Stir in the oats and raisins (if using) until evenly distributed.

Bake the cookies:

  1. Scoop tablespoon-sized portions of dough and roll them into balls. Place them about 2 inches apart on the prepared baking sheets.

Make the cream filling:

Assemble the oatmeal cream pies:

  2. Top with another cookie, pressing gently to sandwich them together.
  3. Repeat with the remaining cookies and filling.
