Ingredients
- 3/4 cup butter (1 1/2 sticks, softened)
- 1 cup sugar
- 1 egg
- 1 teaspoon vanilla
- 1/4 cup + 2 tablespoons cocoa powder
- 1 1/2 cups flour
- 1/2 teaspoon baking soda
- 1/8 teaspoon baking powder
- 1/2 teaspoon salt
Sweet Buttercream Filling:
- 3/4 cup butter (softened)
- 1 1/2 cups powdered sugar
- 1 teaspoon vanilla
Instructions
- Heat oven to 350 degrees.
- In a large bowl, cream together butter and sugar until light and fluffy -- about 4 minutes.
- Add egg and vanilla and beat until creamy. Scrape down the sides of the bowl.
- Add cocoa, flour, baking soda, baking powder, and salt.
- Using a scoop, drop 12-16 cookies onto parchment paper or Silpat lined cookie sheet. Sprinkle with sugar.
- Bake for 13-16 minutes.
- Remove from oven and let cool.

Sweet Vanilla Cream Filling:
- In a large mixing bowl, cream butter for 2 minutes. Add powdered sugar and whip until light and fluffy, about 2 minutes longer. Add vanilla.
- Once cookies have cooled, spread sweet buttercream filling on bottom of the cookie. Top with second cookie.
