Ingredients

  • 1 1/2 cups all purpose flour unbleached
  • 1/3 cup instant dry milk powder
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon salt
  • 1 large egg
  • 2 tablespoon melted butter or canola oil
  • 1 1/4 cups cold water

  1. In a large bowl, whisk all dry ingredients together until well combined. Create a well in the center and add in the egg, butter, and water. Whisk well to create a mostly lump-free batter. If the batter is too thick for your liking, add in more water. If the batter is too thin, add more flour. 
  2. Fry on a lightly buttered nonstick skillet over medium-low to medium heat until golden brown on both sides. 
  3. Serve with butter and maple syrup.
