Ingredients

  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • 15 ounce crushed tomatoes canned
  • 3 ounces tomato paste
  • 1 teaspoon granulated sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • Pinch red pepper flakes optional

Instructions

  1. Heat a saucepan over medium-low heat.
  2. When hot, add olive oil and reduce heat to low.
  3. Stir in garlic and cook, stirring constantly, for 1-2 minutes, or just until the garlic is soft and fragrant. You don't want the garlic to brown, or it can get bitter.
  4. Add the crushed tomatoes, tomato paste, sugar, salt, pepper, Italian seasoning, and a pinch of red pepper flakes, if using. Stir to combine.
  5. Cover the saucepan.
  6. Let simmer for 20-30 minutes over low, stirring occasionally.
  7. Let the sauce cool for at least 10 minutes before using.

Notes

  • Increase garlic for a stronger flavor if desired.
  • Sugar balances tomato acidity but can be substituted with a small amount of baking soda or omitted.
  • Salt quantity can be adjusted according to taste and other ingredients.
  • If Italian seasoning is unavailable, mix dried basil, oregano, thyme, marjoram, and rosemary as a substitute.
