Ingredients
- 1 tablespoon olive oil
- 2 cloves garlic minced
- 15 ounce crushed tomatoes canned
- 3 ounces tomato paste
- 1 teaspoon granulated sugar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 teaspoon Italian seasoning
- Pinch red pepper flakes optional
Instructions
- Heat a saucepan over medium-low heat.
- When hot, add olive oil and reduce heat to low.
- Stir in garlic and cook, stirring constantly, for 1-2 minutes, or just until the garlic is soft and fragrant. You don't want the garlic to brown, or it can get bitter.
- Add the crushed tomatoes, tomato paste, sugar, salt, pepper, Italian seasoning, and a pinch of red pepper flakes, if using. Stir to combine.
- Cover the saucepan.
- Let simmer for 20-30 minutes over low, stirring occasionally.
- Let the sauce cool for at least 10 minutes before using.
Notes
- Increase garlic for a stronger flavor if desired.
- Sugar balances tomato acidity but can be substituted with a small amount of baking soda or omitted.
- Salt quantity can be adjusted according to taste and other ingredients.
- If Italian seasoning is unavailable, mix dried basil, oregano, thyme, marjoram, and rosemary as a substitute.
