Ingredients

  • 4 medium Russet potatoes
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon kosher salt

  1. Rinse and scrub the potatoes.
  2. Using a mandoline, cut potatoes into thin, even slices (about ⅛-inch thick).
  3. Transfer the potato slices to a large bowl, cover with ice water, and let the potatoes soak for about 30 minutes.
  4. While the potatoes are soaking, preheat the oven to 450°F and line 2 baking sheets with parchment paper. Set aside.
  5. When ready, drain and pat the potatoes dry with a paper towel.
  6. Add the oil to the bowl and toss to coat the potato slices evenly.
  7. Sprinkle with kosher salt.
  8. Place the potatoes in a single layer on the lined baking sheets.
  9. Bake for 20-25 minutes, flipping halfway.
  10. Once cooled, store potato chips in an airtight container.
