Ingredients

  • 1 tbsp sesame oil toasted
  • 4 cloves garlic
  • 1 tbsp ginger minced, fresh
  • 4 oz shiitake mushrooms stems removed, sliced, caps
  • ½ cup carrot shredded
  • 8 cups vegetable broth or chicken broth
  • 2 tbsp soy sauce or more to taste
  • 3 oz yaki-soba noodles packages
  • 2 cups baby spinach
  • 1 egg if desired, hard boiled or soft boiled, half per bowl

Instructions

  1. Make hard-boiled eggs, if desired.
  2. Heat 1 tablespoon sesame oil in a large Dutch oven over medium heat. Add garlic and ginger along with the carrots and mushrooms, and cook, stirring frequently, until fragrant, about 1-2 minutes.
  3. Whisk in broth and soy sauce. Bring to a boil; reduce heat and simmer until mushrooms have softened, about 10 minutes.
  4. Stir in Yaki-Soba until loosened and cooked through, about 2-3 minutes.
  5. Stir in spinach and cook until it begins to wilt, about 2 minutes.
  6. Top with a hard-boiled egg. Serve immediately.
