Ingredients

Crust:
  • 2 cups flour
  • ½ cup sugar
  • ½ cup butter cubed
  • 1 egg
  • 1 tablespoon milk
Filling:
  • ¾ cup raspberry jam
Topping:
  • 2 cups flaked coconut
  • 2 eggs
  • 2 tablespoons butter melted
  • 1 teaspoon vanilla

Instructions

  1. Preheat oven to 350F. Grease an 8x8 inch baking pan. Set aside.
Crust:
  1. In a large bowl whisk together the flour and sugar.
  2. Cut in the butter cubes until the mixture resembles coarse crumbs.
  3. Add the egg and milk and mix to form a dough.
  4. Press the dough into the prepared pan and bake for 20 minutes, until lightly golden.
  5. Spread the raspberry jam filling over the warm crust.
Topping:
  1. In a medium bowl lightly beat the eggs.
  2. Mix in the melted butter and the vanilla.
  3. Add the coconut and stir to combine.
  4. Spread the coconut mixture over the jam filling and bake for 25 minutes.
  5. Cool completely in the pan before cutting into squares.
