Ingredients
Crust:
- 2 cups flour
- ½ cup sugar
- ½ cup butter cubed
- 1 egg
- 1 tablespoon milk
Filling:
- ¾ cup raspberry jam
Topping:
- 2 cups flaked coconut
- 2 eggs
- 2 tablespoons butter melted
- 1 teaspoon vanilla
Instructions
- Preheat oven to 350F. Grease an 8x8 inch baking pan. Set aside.
Crust:
- In a large bowl whisk together the flour and sugar.
- Cut in the butter cubes until the mixture resembles coarse crumbs.
- Add the egg and milk and mix to form a dough.
- Press the dough into the prepared pan and bake for 20 minutes, until lightly golden.
- Spread the raspberry jam filling over the warm crust.
Topping:
- In a medium bowl lightly beat the eggs.
- Mix in the melted butter and the vanilla.
- Add the coconut and stir to combine.
- Spread the coconut mixture over the jam filling and bake for 25 minutes.
- Cool completely in the pan before cutting into squares.
