Homemade Refried Bean and Cheese Flautas

Ingredients

  • ½ cup homemade refried beans **Store-bought work too!
  • 1-2 tbsp vegetable oil
  • 6 small flour tortillas
  • extra sharp cheddar cheese shredded
Serving:
  • diced tomato garnish
  • fresh cilantro chopped, garnish
  • sour cream
  • Spicy salsa
  • guacamole

Instructions

  1. If desired, make the homemade refried beans. Side Note: They are best simmered all day long.
  2. Heat the oil in a large skillet over medium heat.
  3. Spoon a small amount of refried beans down the center of each tortilla. Top with some shredded cheese.
  4. Roll tightly and place seam side down in the hot skillet; repeat with remaining tortillas, beans, and cheese. Side Note: Use a small amount of beans in each flauta or they will bake out and make a huge mess.
  5. Once all of the flautas are in the hot skillet, gently roll them with tongs until all sides of the flautas are coated with a bit of oil. Return the flautas to the seam side down in the skillet.
  6. Cook for a couple of minutes, until golden brown then flip the flautas over and cook another couple of minutes until golden brown.
  7. Flip the flautas to the two other remaining sides, until they are golden brown.
  8. Remove from the skillet and place on a serving plate. Serve topped with sour cream, diced tomatoes, fresh cilantro, and the salsa and guacamole on the side. Enjoy!
