Homemade Refried Bean and Cheese Flautas

Ingredients
- ½ cup homemade refried beans **Store-bought work too!
- 1-2 tbsp vegetable oil
- 6 small flour tortillas
- extra sharp cheddar cheese shredded
Serving:
- diced tomato garnish
- fresh cilantro chopped, garnish
- sour cream
- Spicy salsa
- guacamole

Instructions
- If desired, make the homemade refried beans. Side Note: They are best simmered all day long.
- Heat the oil in a large skillet over medium heat.
- Spoon a small amount of refried beans down the center of each tortilla. Top with some shredded cheese.
- Roll tightly and place seam side down in the hot skillet; repeat with remaining tortillas, beans, and cheese. Side Note: Use a small amount of beans in each flauta or they will bake out and make a huge mess.
- Once all of the flautas are in the hot skillet, gently roll them with tongs until all sides of the flautas are coated with a bit of oil. Return the flautas to the seam side down in the skillet.
- Cook for a couple of minutes, until golden brown then flip the flautas over and cook another couple of minutes until golden brown.
- Flip the flautas to the two other remaining sides, until they are golden brown.
- Remove from the skillet and place on a serving plate. Serve topped with sour cream, diced tomatoes, fresh cilantro, and the salsa and guacamole on the side. Enjoy!
