Homemade Starbucks Pink Drink

Ingredients

For pink drink:
  • 2 cups white grape juice
  • 1 cup coconut milk unsweetened
  • 2 tablespoons strawberry simple syrup *see recipe below
  • 1/2 cup strawberries fresh, sliced
For strawberry simple syrup:
  • 1-1/2 cups strawberry diced
  • 1 cup granulated sugar
  • 1 cup water

Instructions

For pink drink:
    Cup of Yum
  1. In a pitcher add white grape juice, unsweetened coconut milk, and strawberry simple syrup.
  2. Stir to combine, taste, add more strawberry simple syrup if desire.
  3. To serve, pour over ice and garnish with fresh berries.
For strawberry simple syrup:
  1. To a medium-sized saucepot add diced strawberries, granulated sugar and water. Stir to gently combine.
  2. Set over medium heat and bring to a simmer and cook until the strawberries are mushy and the syrup has thickened, about 15 minutes.
  3. Remove from the heat and let cool, about 30 minutes.
  4. Over a fine mesh strainer, strain the simple syrup, add to an airtight container or jar and keep in the refrigerator for up to a week.

Notes

  • Sweetness can be adjusted using simple syrup, zero-calorie sweeteners, or natural sweeteners like honey or agave.
  • Freeze-dried strawberries may be used instead of fresh for a different texture and flavor.
  • Unsweetened coconut milk is called for, but sweetened or vanilla-flavored coconut milk can be used for added sweetness or vanilla notes.
  • White grape juice can be substituted with white cranberry juice for a different fruity base.
  • Strawberry simple syrup should be stored in the fridge and used within a week for best freshness.
