Honey Balsamic Chicken Thighs Recipe

Honey balsamic chicken thighs are an easy and flavorful dish that's sure to please. This balsamic glazed chicken takes just 30 minutes!

Ingredients

  • 2 blood oranges or regular oranges, divided
  • ½ cup balsamic vinegar
  • 3 tablespoons low-sodium soy sauce
  • ¼ cup unsulphured molasses
  • ¼ cup honey
  • 3 cloves garlic
  • 2 small onions chopped in half
  • 1 teaspoon ground ginger
  • ½ teaspoon ground sweet paprika
  • ½ teaspoon kosher salt
  • 1 tablespoon coconut oil melted
  • 1½ pounds boneless, skinless chicken thighs
  • 6 radishes
  • 4 sprigs thyme
  • freshly ground black pepper to taste

Instructions

  1. Preheat oven to 350°F.
  2. In a large bowl, squeeze the juice of 1 blood orange.
  3. Add the balsamic vinegar, soy sauce, molasses, honey, garlic cloves, onions, ginger, sweet paprika, salt and coconut oil. Mix well.
  4. Add the chicken thighs into the bowl with the glaze, and rub the mixture all over.
  5. Line an oven tray or baking dish with baking paper.
  6. Add the chicken to the baking dish and pour the rest of the glaze over it.
  7. Slice the other blood orange and add it to the dish.
  8. Add the radish and thyme stems.
  9. Bake for 30 minutes. Halfway through, turn the chicken over.
  10. Remove from oven. Season with pepper and enjoy!

Notes

  • Storage: Store leftovers in an airtight container, or wrapped tightly in aluminum foil. It will keep in the fridge for 3 days. Reheat in the oven until it reaches 165°F.
