Honey-Balsamic Dressing

Ingredients

  • ⅔ cup extra-virgin olive oil
  • ⅓ cup balsamic vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • Pinch salt
  • black pepper to taste, freshly ground

Instructions

  1. Combine all ingredients in a mason jar, and secure the lid tightly.
  2. Shake the jar vigorously for about 30 seconds until the dressing is well emulsified and slightly thickened.
  3. Taste and adjust seasoning if necessary. Use immediately or store in the refrigerator for up to 2 weeks.
