Ingredients

  • ¼ cup melted butter (preferably unsalted)
  • ¼ cup honey (or maple syrup)
  • 1 tsp sea salt (plus more for topping)
  • 1 tablespoon lemon zest (from 1 lemon)
  • 1 lb carrots (peeled and cut into quarters lengthwise)
  • 1 lb asparagus (tough ends trimmed off)

Instructions

  1. Preheat your oven to 425°F (220°C). In a small bowl, mix together melted butter, honey, and salt until well combined.
  2. Place carrots and asparagus on a baking sheet lined with parchment paper, spreading them out evenly.
  3. Brush the honey butter mixture onto the vegetables.
  4. Bake in the oven for about 15 minutes, or until the vegetables are tender.
  5. Serve with an extra sprinkle of sea salt and lemon zest.

Notes

  • Heat the honey in the microwave for 30 seconds to make is easier to brush onto the vegetables.
