Ingredients

  • 2 tablespoon butter
  • 4 cups corn see notes
  • 2 tablespoons honey
  • 4 tablespoons cream cheese can be light
  • ½ teaspoon each: sea salt and pepper
  • 1 tablespoon hot sauce optional - see notes
  • 2 tablespoons minced chives or green onions

Instructions

    Cup of Yum
  1. Melt the butter in a large frying pan over medium-high heat. Add the corn and cook, stirring a few times, until it's hot. If there is liquid in the bottom of your pan, let it mostly evaporate before moving on to the next step.
  2. Add the honey and cream cheese and stir until the cream cheese has melted. Season with salt, pepper, and if using, hot sauce. Stir in the chives.

Notes

  • In the summer, try making this with fresh corn cut off the cob. For the rest of the year, this is a great recipe to use frozen corn or canned corn but make sure to thaw/drain the corn first.
  • We like to use a mild hot sauce such as Frank's in this recipe. But you can use something spicer for more kick if you'd like.
