Ingredients
- 2 tablespoon butter
- 4 cups corn see notes
- 2 tablespoons honey
- 4 tablespoons cream cheese can be light
- ½ teaspoon each: sea salt and pepper
- 1 tablespoon hot sauce optional - see notes
- 2 tablespoons minced chives or green onions
Instructions
- Melt the butter in a large frying pan over medium-high heat. Add the corn and cook, stirring a few times, until it's hot. If there is liquid in the bottom of your pan, let it mostly evaporate before moving on to the next step.
- Add the honey and cream cheese and stir until the cream cheese has melted. Season with salt, pepper, and if using, hot sauce. Stir in the chives.

Notes
- In the summer, try making this with fresh corn cut off the cob. For the rest of the year, this is a great recipe to use frozen corn or canned corn but make sure to thaw/drain the corn first.
- We like to use a mild hot sauce such as Frank's in this recipe. But you can use something spicer for more kick if you'd like.
