Honey Chipotle Dressing
This Honey Chipotle Dressing blends smoky chipotle with sweet honey, balanced by avocado oil, red wine vinegar, and spices. It emulsifies into a smooth, pourable dressing with a mild kick from the chipotle pepper in adobo sauce. The addition of garlic and cumin adds depth, making it suitable for drizzling over salads or as a dipping sauce.
Ingredients
- ⅓ cup avocado oil plus a little extra to taste if desired
- 3 TBSP red wine vinegar
- 1.5 TBSP honey
- ¾ tsp salt
- ¼ tsp black pepper
- ¼ tsp oregano dried
- ¼ tsp cumin ground
- 1 chipotle pepper in adobo sauce
- 1 garlic smashed and peeled, small or medium clove
Instructions
- Combine all ingredients in a blender or small food processor and blend/process until smooth and emulsified.
- Dip a leaf of lettuce into the dressing to taste-test and adjust any ingredients to taste. For more chipotle flavor you can add a little extra adobo sauce or adjust the sweetness/tartness with the honey and vinegar, etc... Let your taste buds be your guide!
- OPTIONAL EXTRA: 1 TBSP fresh squeezed lime juice for a burst of citrus flavor.
Notes
- The recipe yields roughly ½ cup; use about 2 tablespoons per salad serving for four sides.
- Adjust chipotle pepper and adobo sauce quantity to vary heat intensity to your preference.
- Adding fresh lime juice brightens the flavor without overpowering the smoky notes.
- Store leftover dressing in the refrigerator and shake well before use to re-emulsify.
