Description

The Honey Chipotle Dressing combines creamy avocado oil with red wine vinegar and honey to achieve both tartness and sweetness. The chipotle pepper in adobo adds a smoky heat, balanced by dried oregano, cumin, fresh garlic, salt, and black pepper, which provide aromatic, earthy notes. Processed together until smooth, the dressing has a rich texture and vibrant flavor that can be customized by adjusting the amount of adobo sauce or sweetener.

  • cup avocado oil plus a little extra to taste if desired
  • 3 TBSP red wine vinegar
  • 1.5 TBSP honey
  • ¾ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp oregano dried
  • ¼ tsp cumin ground
  • 1 chipotle pepper in adobo sauce
  • 1 garlic smashed and peeled, small or medium clove

Instructions

  1. Combine all ingredients in a blender or small food processor and blend/process until smooth and emulsified.
  2. Dip a leaf of lettuce into the dressing to taste-test and adjust any ingredients to taste. For more chipotle flavor you can add a little extra adobo sauce or adjust the sweetness/tartness with the honey and vinegar, etc... Let your taste buds be your guide!
  3. OPTIONAL EXTRA: 1 TBSP fresh squeezed lime juice for a burst of citrus flavor.

Notes

  • The recipe yields roughly ½ cup; use about 2 tablespoons per salad serving for four sides.
  • Adjust chipotle pepper and adobo sauce quantity to vary heat intensity to your preference.
  • Adding fresh lime juice brightens the flavor without overpowering the smoky notes.
  • Store leftover dressing in the refrigerator and shake well before use to re-emulsify.
