Honey Chipotle Dressing
Description
The Honey Chipotle Dressing combines creamy avocado oil with red wine vinegar and honey to achieve both tartness and sweetness. The chipotle pepper in adobo adds a smoky heat, balanced by dried oregano, cumin, fresh garlic, salt, and black pepper, which provide aromatic, earthy notes. Processed together until smooth, the dressing has a rich texture and vibrant flavor that can be customized by adjusting the amount of adobo sauce or sweetener.
This dressing pairs well with leafy greens to add smoky, sweet, and tangy elements. It can also enhance grilled vegetables or used as a marinade. Optionally, a splash of fresh lime juice brightens the flavor profile without overpowering the chipotle warmth.
The recipe yields about half a cup of dressing, sufficient for four side salads, and can be doubled as needed. This dressing can be stored refrigerated and shaken before use to recombine any separation.
Ingredients
- ⅓ cup avocado oil plus a little extra to taste if desired
- 3 TBSP red wine vinegar
- 1.5 TBSP honey
- ¾ tsp salt
- ¼ tsp black pepper
- ¼ tsp oregano dried
- ¼ tsp cumin ground
- 1 chipotle pepper in adobo sauce
- 1 garlic smashed and peeled, small or medium clove
Instructions
- Combine all ingredients in a blender or small food processor and blend/process until smooth and emulsified.
- Dip a leaf of lettuce into the dressing to taste-test and adjust any ingredients to taste. For more chipotle flavor you can add a little extra adobo sauce or adjust the sweetness/tartness with the honey and vinegar, etc... Let your taste buds be your guide!
- OPTIONAL EXTRA: 1 TBSP fresh squeezed lime juice for a burst of citrus flavor.
Notes
- The recipe yields roughly ½ cup; use about 2 tablespoons per salad serving for four sides.
- Adjust chipotle pepper and adobo sauce quantity to vary heat intensity to your preference.
- Adding fresh lime juice brightens the flavor without overpowering the smoky notes.
- Store leftover dressing in the refrigerator and shake well before use to re-emulsify.
