Honey Garlic Carrots

Ingredients

  • 8 carrots
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • ¼ cup honey
  • fresh parsley finely chopped, for garnish

Instructions

  1. Preheat the oven to 350 degrees F
  2. Peel the carrots and remove the ends. Use a sharp knife to diagonally cut the carrots into 1-inch pieces. (This makes them look fancy.)
  3. Place carrots in a large oven-safe skillet or onto a baking sheet. Toss with olive oil until completely coated.
  4. Sprinkle with garlic powder, salt, and pepper. Then use your hands to rub the seasoning all over the carrots.
  5. Roast in the oven for 30 minutes. Remove from the oven and stir the carrots. Then drizzle honey all over the top.
  6. Place the pan back in the oven and roast for an additional 15 minutes.
  7. Remove from the oven once the carrots are tender and sprinkle with chopped parsley for garnish if desired.

Notes

  • If using a skillet, the carrots won't be as spread out and may take some extra time to cook. You can check for doneness by piercing a piece of carrot with a sharp knife. It should slide in easily when the carrots are ready.
