Ingredients
- 8 carrots
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon salt
- ½ teaspoon pepper
- ¼ cup honey
- fresh parsley finely chopped, for garnish

Instructions
- Preheat the oven to 350 degrees F
- Peel the carrots and remove the ends. Use a sharp knife to diagonally cut the carrots into 1-inch pieces. (This makes them look fancy.)
- Place carrots in a large oven-safe skillet or onto a baking sheet. Toss with olive oil until completely coated.
- Sprinkle with garlic powder, salt, and pepper. Then use your hands to rub the seasoning all over the carrots.
- Roast in the oven for 30 minutes. Remove from the oven and stir the carrots. Then drizzle honey all over the top.
- Place the pan back in the oven and roast for an additional 15 minutes.
- Remove from the oven once the carrots are tender and sprinkle with chopped parsley for garnish if desired.
Notes
- If using a skillet, the carrots won't be as spread out and may take some extra time to cook. You can check for doneness by piercing a piece of carrot with a sharp knife. It should slide in easily when the carrots are ready.
