Ingredients
Marinade
- 1/2 cup honey
- 2 tablespoons apple cider vinegar
- 2 tablespoons soy sauce
- 2 tablespoons minced garlic
- 1 teaspoon parsley
Packet Ingredients
- 2 pounds chicken breasts about 4 chicken breasts
- 2 tablespoon butter
- salt and pepper
- 1 pound asparagus
- 1 1/2 pound baby red potatoes quartered
Instructions
- In a bowl whisk the honey, apple cider vinegar, soy sauce, garlic parsley. Place the chicken in the marinade for at least 30 minutes.
- Trim the woody part off the asparagus, then cut the asparagus pieces in half. Slice the potatoes into quarters.
- Place two large sqaure pieces of foil on top of each other, one for each chciken breast. Place a chicken breast on top of the foil. Slice the butter into pieces and add it on top of the chicken breasts. Sprinkle with salt and pepper.
- Place potatoes and asparagus around the chicken splitting them evenely between the chicken.. Pour marinade over chicken and vegetables. roll the edges of the foil pouch up to close.
- Place the pouches on the grill or campfire for 20-30 minutes or until the chicken reaches an internal temperature of 165 degrees. Potatoes should be tender, and the chicken should be cooked all the way through. Let cool for a few minutes, then enjoy!

Notes
- It is better to underfill these camping packets than overfill. If the packets are becoming too full, split them between more pieces of foil.
- Swap 3-4 cloves of fresh garlic for the minced garlic
- Thicker asparagus about the width of a finger works better in this recipe. Thin asparagus will overcook. If you have thin asparagus I recommend cooking it in a separate piece of foil so as not to overcook for 10-15 minutes. You can add a couple tablespoons of the marinade to the foil before cooking for flavor.
- Sometimes instead of salt and pepper, I swap in a little bit of an all purpose seasoning. Nature's Bounty and Everything But The Bagel Seasoning are both delicious!
- You can bake these campfire packets in the oven at 375 degrees for 20-25 minutes or until the chicken reaches an internal temperature of 165 and the potatoes are fork tender.
