Ingredients

  • 2 tablespoons olive oil
  • ½ bundle asparagus cut into 1-inch pieces
  • 4 ounces mushrooms sliced
  • 1 small yellow squash sliced
  • 1 small zucchini sliced
  • 1 cubed red bell pepper 1-inch cubes
  • salt and pepper to taste
  • 1 pound cubed chicken 1-inch cubes
  • ¼ cup soy sauce
  • ¼ cup honey
  • 1 teaspoon sesame oil
  • 1/2 cup chicken broth
  • 3 cloves minced garlic 
  • 2 teaspoons cornstarch
  • Red pepper flakes to taste

Instructions

  1. Heat a large skillet over medium-high heat, add 2 tablespoons olive oil, ½ bundle asparagus, 4 ounces mushrooms, 1 small yellow squash, 1 small zucchini, 1 cubed red bell pepper, and salt and pepper to taste until tender. Remove from the pan and set aside on a plate.
  2. Add 1 pound cubed chicken and cook until tender and no longer pink. In a small bowl, whisk ¼ cup soy sauce, ¼ cup honey, 1 teaspoon sesame oil, 1/2 cup chicken broth, 3 cloves minced garlic, red pepper flakes to taste, and 2 teaspoons cornstarch.
  3. Add the vegetables back to the skillet with the chicken and pour sauce on top. Simmer until sauce starts to thicken and serve over rice if desired.
