Honey Lime Crock pot Pork Tenderloin

Ingredients

  • 2 pounds pork tenderloin
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1/2 cup honey
  • 1/4 cup soy sauce
  • 1 tablespoon Worcestershire sauce 
  • 2 limes juiced
  • 2 teaspoons minced garlic 
  • 1 teaspoon ground ginger
  • 2 Tablespoons cornstarch

Instructions

  1. Place the pork tenderloin in a slow cooker. Season with salt and pepper.
  2. In a small bowl, whisk together the honey, soy sauce, Worcestershire sauce, lime juice, garlic and ginger.
  3. Pour over the tenderloin.
  4. Cook on low 4-6 hours or until the tenderloin is tender.
  5. When finished, place the tenderloin on a cookie sheet, lined with foil. Broil for 5-10 minutes or until it is browned.
  6. Slice.
  7. Meanwhile pour the juices from the crock pot into a saucepan. Stir in the cornstarch and heat (stirring occasionally) until thickened.
  8. Drizzle the sauce over the tenderloin.
  9. Serve with cilantro and fresh limes.

Notes

  • Refrigerate the leftovers in an air tight container for up to 5-6 days.
