Ingredients

  • 8 chicken thighs bone in, skin on
  • ¼ cup Dijon mustard
  • ¼ cup sugar-free honey
  • 2 tablespoons mayonnaise
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons whole grain mustard
  • 2 tablespoons olive oil
  • 2 cloves garlic grated
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper

Instructions

  1. Add the mustard, honey, mayonnaise, apple cider vinegar, olive oil, garlic, salt and pepper to a mixing bowl. Whisk until well combined.
  2. Add the chicken into a 9 x 13 casserole baking dish. Then pour the marinade over the chicken.
  3. Cover with plastic wrap and allow the chicken to marinate in the fridge for 1 hour.
  4. Preheat oven to 400°F. Bake for 30-40 minutes, or until the chicken reaches an internal temperature of at least 165°F, when checked with a meat thermometer.
  5. You can serve with the juices poured over the top or what I did was poured the juices into a saucepan and simmer for 10 minutes. Whisk in about ¼ teaspoon of xathan gum, which helps to thicken the sauce. This step is completely optional, but recommended.
