Honey Roasted Carrots

A super simple recipe for tender Honey Roasted Carrots using only a few staple pantry items. These Roasted Carrots are delicious with an incredible honey caramelized finish, perfect side dish to any meal, but also ideal for any holiday!

Ingredients

  • 2-3 pounds carrots peeled and trimmed
  • 3 tablespoons olive oil
  • ¼ cup honey
  • 1 teaspoon garlic powder
  • salt and pepper to taste
  • 2 tablespoons fresh parsley chopped

  1. Preheat the oven: Preheat your oven to 400°F.
  2. Make honey mixture: In a small bowl whisk together the olive oil, honey, garlic powder salt and pepper.
  3. Prepare carrots: Arrange the carrots in a single layer on a baking sheet. Drizzle the honey mixture over the carrots and toss them around to make sure the carrots are thoroughly coated.
  4. Roast the carrots: Place the baking sheet in the oven and roast for 25-30 minutes or until the carrots are tender and start to brown.
  5. Garnish and serve: Garnish with fresh parsley and serve immediately.

Notes

  • The baking time can vary based on how thick your carrots are. You want to cook them until they're fork tender.
  • Play around with spices for different flavor profiles. Try adding a pinch of cinnamon or nutmeg to the honey mixture. 
  • You can also use baby carrots if you prefer.
  • For a change, use equal amounts of maple syrup, agave syrup or even brown sugar.
  • Any protein such as chicken, turkey, pork or beef goes very well with these carrots.
  • Try using this honey mixture on different veggies, such as brussels sprouts, asparagus or butternut squash.
  • Place cooled honey roasted carrots in an airtight container and store in the refrigerator for 3-5 days.
