A super simple recipe for tender Honey Roasted Carrots using only a few staple pantry items. These Roasted Carrots are delicious with an incredible honey caramelized finish, perfect side dish to any meal, but also ideal for any holiday!

Ingredients
- 2-3 pounds carrots peeled and trimmed
- 3 tablespoons olive oil
- ¼ cup honey
- 1 teaspoon garlic powder
- salt and pepper to taste
- 2 tablespoons fresh parsley chopped

Instructions
- Preheat the oven: Preheat your oven to 400°F.
- Make honey mixture: In a small bowl whisk together the olive oil, honey, garlic powder salt and pepper.
- Prepare carrots: Arrange the carrots in a single layer on a baking sheet. Drizzle the honey mixture over the carrots and toss them around to make sure the carrots are thoroughly coated.
- Roast the carrots: Place the baking sheet in the oven and roast for 25-30 minutes or until the carrots are tender and start to brown.
- Garnish and serve: Garnish with fresh parsley and serve immediately.
Notes
- The baking time can vary based on how thick your carrots are. You want to cook them until they're fork tender.
- Play around with spices for different flavor profiles. Try adding a pinch of cinnamon or nutmeg to the honey mixture.
- You can also use baby carrots if you prefer.
