Honey Roasted Cashews

Ingredients

  • 1 tablespoon unsalted butter
  • 2 tablespoons honey
  • 1 tablespoon packed light brown sugar
  • ½ teaspoon vanilla extract
  • ½ teaspoon cinnamon
  • ¼ teaspoon sea salt plus more for serving
  • 2 cups raw cashews

Instructions

  1. Preheat the oven to 350°F. Line a small baking sheet with parchment paper.
  2. In a medium bowl, melt the butter in 2 30-second increments. Add the honey, brown sugar, vanilla, cinnamon, and salt, and stir together until well combined.
  3. Add the cashews on top of the honey mixture and stir until all the cashews are evenly coated.
  4. Spread the cashews in a single layer on the prepared baking sheet. Bake in the preheated oven for 15-20 minutes, stirring every 5 minutes to ensure even roasting. The cashews should be golden brown and fragrant.
  5. Remove the cashews from the oven and immediately sprinkle with more sea salt. Let them cool on the baking sheet; they will become crisp as they cool.
  6. Once completely cooled, transfer the honey roasted cashews to an airtight container. They can be stored at room temperature for up to two weeks.

  • Storage: Keep in an airtight container for up to 2 weeks at room temperature.
