Ingredients

  • 2 tablespoons butter unsalted
  • 2 tablespoons honey
  • 1 teaspoon smoked paprika not regular paprika
  • 16 ounces mixed nuts raw and unsalted - see notes below
  • ¾ teaspoon salt sea salt

  1. Preheat your oven to 300℉. Line a rimmed baking sheet with parchment paper.
  2. Melt the butter in a large bowl. Mix in the honey and smoked paprika.
  3. Add the nuts and use a rubber spatula to mix them into the butter mixture until well coated.
  4. Spread the coated nuts on the parchment-lined baking sheet. Sprinkle them with salt.
  5. Bake the nuts in the preheated oven until fragrant and browned, for about 25-30 minutes.
  6. Remove the pan from the oven. Leave the nuts on the baking sheet and let them cool and crisp up, undisturbed, for about 20 minutes.
  7. When cool, gently separate them with your hands (they tend to stick together), then store them at room temperature in an airtight container for up to a week.

Notes

  • Recommended nut mix includes 4 ounces each of hazelnuts, almonds, pecans, and shelled pistachios for balanced flavor and texture.
  • Roast nuts slowly at 300°F to ensure even toasting without burning; avoid increasing temperature.
  • Ovens vary—start checking for doneness after 20 minutes to prevent over-roasting.
  • Store roasted nuts in an airtight container at room temperature for up to a week; they may lose crunch after the first day but can be reheated at 300°F for 10 minutes to restore crispness.
  • For longer storage, keep nuts refrigerated or frozen in airtight containers.
