Honey Sriracha Pineapple Chicken Skewers

Ingredients

  • 2 pounds chicken thigh cut into bite sized pieces, boneless, skinless
  • 10 skewers (metal or wooden (soaked in water for 30 minutes))
  • 1 pineapple
  • 1 medium red onion
Marinade
  • ⅓ cup honey
  • ¼ cup sriracha (or hot sauce of choice)
  • 3 tablespoon soy sauce
  • 3 cloves garlic (finely minced)
  • 1 teaspoon ginger (fresh minced)

Instructions

  1. Cut chicken thighs into bite sized pieces (approximately 1” pieces). Transfer to a large bowl or Ziploc bag.
  2. In a small bowl combine the marinade ingredients. Pour half of the marinade over the chicken. Transfer to the fridge to marinate for 15 minutes – overnight.
  3. While the chicken marinates peel the pineapple and red onion. Cut into bite sized pieces (Approximately the same size as the chicken, 1” pieces).
  4. If using wooden skewers soak them in water for 30 minutes to prevent burning. To assemble the skewers, add 2 pieces of chicken, 1 piece of pineapple, and 1 piece of red onion. Repeat until the skewer is full. Note: Do not squeeze the chicken and pineapple too close together.
  5. Preheat BBQ or grill pan to medium-high (375°F). Grill the skewers for 4-5 minutes per side, baste with remaining marinade while cooking. Grill until the chicken is cooked through (internal temperature 165°F).
  6. Transfer the cooked skewers to a serving platter, garnish with sesame seed and thinly sliced green onions.
  7. Serve and enjoy!
