Honey Sriracha Pineapple Chicken Skewers
Description
Honey Sriracha Pineapple Chicken Skewers feature bite-sized chicken thighs, marinated in a mixture of honey, sriracha, soy sauce, garlic, and fresh ginger, giving a depth of flavor with mild heat and sweetness. The skewers include fresh pineapple chunks and red onion, which provide a juicy contrast and slight sharpness. Grilling over medium-high heat caramelizes the sugars in the marinade while producing a smoky char on the meat and fruit.
Assembling the skewers involves alternating chicken, pineapple, and onion pieces to achieve a balanced texture and flavor with every bite. Cooking them on a preheated grill for roughly 4 to 5 minutes per side ensures the chicken reaches a safe internal temperature while maintaining juiciness.
This dish can be served as a main course alongside rice, vegetables, or a fresh salad. Basting the skewers with leftover marinade during grilling enhances the sticky glaze. Wood skewers should be soaked beforehand to prevent burning; metal skewers are a suitable alternative.
Ingredients
- 2 pounds chicken thigh cut into bite sized pieces, boneless, skinless
- 10 skewers (metal or wooden (soaked in water for 30 minutes))
- 1 pineapple
- 1 medium red onion
Marinade
- ⅓ cup honey
- ¼ cup sriracha (or hot sauce of choice)
- 3 tablespoon soy sauce
- 3 cloves garlic (finely minced)
- 1 teaspoon ginger (fresh minced)
Instructions
- Cut chicken thighs into bite sized pieces (approximately 1” pieces). Transfer to a large bowl or Ziploc bag.
- In a small bowl combine the marinade ingredients. Pour half of the marinade over the chicken. Transfer to the fridge to marinate for 15 minutes – overnight.
- While the chicken marinates peel the pineapple and red onion. Cut into bite sized pieces (Approximately the same size as the chicken, 1” pieces).
- If using wooden skewers soak them in water for 30 minutes to prevent burning. To assemble the skewers, add 2 pieces of chicken, 1 piece of pineapple, and 1 piece of red onion. Repeat until the skewer is full. Note: Do not squeeze the chicken and pineapple too close together.
- Preheat BBQ or grill pan to medium-high (375°F). Grill the skewers for 4-5 minutes per side, baste with remaining marinade while cooking. Grill until the chicken is cooked through (internal temperature 165°F).
- Transfer the cooked skewers to a serving platter, garnish with sesame seed and thinly sliced green onions.
