Honeydew melon bellini
This Honeydew Melon Bellini blends smooth honeydew melon puree with lime juice and a touch of sugar, gently mixed with chilled prosecco or sparkling wine. The drink presents a light, fruity flavor balanced by a slight tartness, delivered in a refreshing sparkling cocktail. Straining the puree ensures a silky texture, preventing any residue that could disrupt the drink's effervescence. It can also be adapted into a non-alcoholic version by swapping the bubbly component with sparkling cider or water.
Ingredients
- 5 cups honeydew melon about ½ of a large melon, diced
- 2 tablespoons lime juice
- sugar to taste, depending on melon sweetness
- 1 prosecco champagne, cava or other sparkling wine, bottle, chilled
Instructions
- Combine the diced honeydew melon with the lime juice and sugar in a blender and blend until you obtain a smooth puree.
- Strain the puree, chill for at least 30 minutes or until ready to use. A couple hours is ideal. For an extra smooth puree that is less likely to make the drinks overflow when mixed with the sparkling wine, strain the honeydew puree a second time after chilling. Then chill again for a few hours. It makes a significant difference.
- Pour the honeydew melon puree into champagne flutes, no more than half full.
- Add the prosecco or other sparkling wine, pouring it gently to avoid making a bubbly mess.
- Stir lightly and serve immediately.
Notes
- For a smoother texture and to reduce foam overflow when mixing, strain the honeydew puree twice after chilling.
- Chill the puree and sparkling wine well before serving to maintain a refreshing temperature.
- The sparkling wine can be substituted with sparkling cider, lemonade, or water for a non-alcoholic version.
