Honeydew melon bellini
Description
The recipe begins by pureeing diced honeydew melon combined with fresh lime juice and sugar to enhance sweetness according to taste. This mixture is strained to create a smooth consistency, chilled thoroughly to maintain its refreshing quality. For the final step, the chilled melon puree fills about half of a champagne flute before gently topping with prosecco or a similar sparkling wine, stirred lightly to blend without diminishing the bubbles.
The melon’s natural sweetness is balanced by lime’s acidity, creating a crisp flavor profile lifted by the sparkling wine’s liveliness. The cocktail's texture is smooth and light due to the fine straining process. It is ideal as a celebratory or brunch beverage and offers an elegant alternative to traditional Bellinis.
For a non-alcoholic option, replace the prosecco with sparkling cider, lemonade, or sparkling water, preserving the cocktail's bubbly character with less sweetness or alcohol.
Ingredients
- 5 cups honeydew melon about ½ of a large melon, diced
- 2 tablespoons lime juice
- sugar to taste, depending on melon sweetness
- 1 prosecco champagne, cava or other sparkling wine, bottle, chilled
Instructions
- Combine the diced honeydew melon with the lime juice and sugar in a blender and blend until you obtain a smooth puree.
- Strain the puree, chill for at least 30 minutes or until ready to use. A couple hours is ideal. For an extra smooth puree that is less likely to make the drinks overflow when mixed with the sparkling wine, strain the honeydew puree a second time after chilling. Then chill again for a few hours. It makes a significant difference.
- Pour the honeydew melon puree into champagne flutes, no more than half full.
- Add the prosecco or other sparkling wine, pouring it gently to avoid making a bubbly mess.
- Stir lightly and serve immediately.
Notes
- For a smoother texture and to reduce foam overflow when mixing, strain the honeydew puree twice after chilling.
- Chill the puree and sparkling wine well before serving to maintain a refreshing temperature.
- The sparkling wine can be substituted with sparkling cider, lemonade, or water for a non-alcoholic version.
