Hot Fudge Sauce

Hot Fudge Sauce is a rich, smooth dessert topping made by simmering cream, butter, sugar, and salt, then melting chocolate into the mixture and thickening it with Dutch-process cocoa. Finished with vanilla extract, it provides a glossy, thick sauce ideal for warming over ice cream or desserts.

Ingredients

  • 1 cup heavy cream
  • 2 tablespoons butter unsalted
  • ⅔ cup sugar
  • ⅛ teaspoon salt
  • ¼ cup bittersweet chocolate chips or semisweet chocolate chips, or 1½ ounces from a bar, chopped
  • ½ cup Dutch-process cocoa sifted
  • ¼ teaspoon vanilla extract or vanilla bean paste

  1. In a medium saucepan, combine the cream, butter, sugar, and salt. Bring to a simmer over medium-low heat, and let simmer for about 1 minute. Remove the pan from the heat and add the chocolate chips (or chopped chocolate); whisk until they are completely melted. Add the sifted cocoa and whisk until no lumps remain.
  2. Return the pan to low heat and simmer the sauce, whisking constantly, until it becomes glossy and thick enough to coat a spoon, about 1 minute. Remove from the heat and stir in the vanilla extract or vanilla bean paste. Serve the sauce warm.

Notes

  • Store leftover hot fudge sauce in a covered container in the refrigerator for up to two weeks.
  • Reheat gently on low heat or in short intervals in the microwave, stirring often to prevent scorching.
  • Avoid boiling the sauce when reheating to maintain its smooth texture.
