Hot Fudge Sauce
Hot Fudge Sauce is a rich, smooth dessert topping made by simmering cream, butter, sugar, and salt, then melting chocolate into the mixture and thickening it with Dutch-process cocoa. Finished with vanilla extract, it provides a glossy, thick sauce ideal for warming over ice cream or desserts.
Ingredients
- 1 cup heavy cream
- 2 tablespoons butter unsalted
- ⅔ cup sugar
- ⅛ teaspoon salt
- ¼ cup bittersweet chocolate chips or semisweet chocolate chips, or 1½ ounces from a bar, chopped
- ½ cup Dutch-process cocoa sifted
- ¼ teaspoon vanilla extract or vanilla bean paste
Instructions
- In a medium saucepan, combine the cream, butter, sugar, and salt. Bring to a simmer over medium-low heat, and let simmer for about 1 minute. Remove the pan from the heat and add the chocolate chips (or chopped chocolate); whisk until they are completely melted. Add the sifted cocoa and whisk until no lumps remain.
- Return the pan to low heat and simmer the sauce, whisking constantly, until it becomes glossy and thick enough to coat a spoon, about 1 minute. Remove from the heat and stir in the vanilla extract or vanilla bean paste. Serve the sauce warm.
Notes
- Store leftover hot fudge sauce in a covered container in the refrigerator for up to two weeks.
- Reheat gently on low heat or in short intervals in the microwave, stirring often to prevent scorching.
- Avoid boiling the sauce when reheating to maintain its smooth texture.
