Hot Turkey Sandwich

Roasted turkey, soft white bread, and a pile of mashed potatoes make the perfect use for those leftovers! Be sure to drown the whole thing with gravy and grab a fork and knife before digging in.

Ingredients

  • ½ cup leftover turkey gravy
  • 2 tablespoons chicken stock more as needed
  • 2-3 slices leftover turkey
  • 2 slices white bread
  • 1/2 cup mashed potatoes for serving

Instructions

  1. Add the gravy to a skillet over medium heat and cook until warm. Thin with extra stock, if needed.
  2. Add the sliced turkey to the gravy and cook over medium heat until the turkey is hot.
  3. Place the turkey on a slice of bread on a plate. Top with the remaining slice of bread. Cut the sandwich in half.
  4. Place a scoop of mashed potatoes on the plate and cover the sandwich and potatoes with the warmed gravy.
  5. Serve hot and eat with a fork.

Notes

  • This sandwich is also good with a bit of cranberry sauce, stuffing, or green bean casserole in with the turkey. Pile in whatever sounds good. 
  • To make gravy from scratch, melt 2 tablespoons of butter in a sauce pan over medium heat. Whisk in flour and cook 1 minute. Slowly whisk in 2 cups of chicken broth and continue cooking, whisking constantly, over medium heat until thickened. Season to taste.
