House Salad

Ingredients

  • ½ cup herb croutons (recipe link up above if desired)
  • Fran's Vinaigrette (recipe link up above if desired)
  • 2 cups romaine lettuce chopped
  • 2 cups red leaf lettuce chopped
  • Handful of grape tomatoes
  • 2 tbsp pine nuts toasted
  • 2 tbsp fresh pomegranate arils or dried cranberries
  • 2 tbsp feta cheese, crumbled or diced
  • 2 tbsp red onion, diced *** Soak in ice water for a few minutes if the flavor is too strong; dry well on a towel
  • Sea Salt and Freshly Cracked Pepper to taste

  1. Make the herb croutons, if desired. (Recipe link is up above)
  2. Make Fran's Vinaigrette, if desired. (Recipe link is up above)
  3. To make the salad, combine the romaine lettuce, red leaf lettuce, grape tomatoes, toasted pine nuts, feta cheese, and red onion in a large bowl.
  4. Drizzle on some of the well-whisked vinaigrette, to taste, then toss to coat everything evenly. Serve immediately with extra vinaigrette on the side.
